  • 1 ají dulce pepper, seeded and minced
  • 1 teaspoon dark brown sugar
  • ½ teaspoon ground cumin
  • 2 cups coconut milk
  • 1 cup chicken broth or vegetable broth
  • Salt and freshly ground black pepper, to taste
  • 2 tablespoons chopped fresh cilantro, for garnish

Instructions:

  1. Cook the Pumpkin:
    In a large saucepan over medium heat, heat the coconut oil. Add the pumpkin chunks, stir well, and cook, covered, for about 15 minutes until softened.

  2. Sauté the Aromatics:
    Add the minced onion, garlic, and ají dulce pepper to the pan. Sauté, stirring occasionally, until the onion becomes translucent, about 3 to 5 minutes.

  3. Add Seasoning and Sweetness:
    Stir in the dark brown sugar and ground cumin. Let it cook for another 2 to 3 minutes until the sugar melts and the spices become fragrant, coating the pumpkin with warm, earthy flavors.

  4. Add the Coconut Milk and Broth:
